I made some bacon mayo this past weekend.

c. bacon grease
2 egg whites
tsp apple cider vinegar
tsp sugar

Using an immersion blender, combine egg whites and vinegar.

If the bacon grease is hard, nuke it for a few seconds.

As you're stirring the egg whites, pour in the grease, continuing to stir.

Add in the sugar and keep stirring until it's whipped into a dellicious fluff.

Store it in the fridge.

Not even bacon can salvage mayo.
 
BLTs are one of the best foods ever.

And a BLT requires mayo.
Yes, but it should not dominate the sandwich.

The real importance is on the bacon of course, but also the freshness of the lettuce and especially the tomato.

Shit tomato? Bad sandwich.
