I'm still operating off my Weber kettle grill, which has been very successful for pork ribs, but constrains me from trying other things...maybe it's time to plunk down ~$500 cashola and go whole hog on a bonafide smoker, pun intended.

I learned how to smoke on a Weber.

Outside of a whole hog, there is nothing you can't smoke on a Weber. Boston butt, brisket, ham, chicken, turkey, whatever. Just push the coals & wood to one side of the grill and meat on the other and I guarantee that you can smoke food that takes just as good as the same thing cooked on a large smoker.
 
You smoker purist just haven't spread your wings far enough. Youn circle of smokerdom catchall is a limited pallet.

I used to be a crockpot guy, but I started spreading my wings.

Yep, if I'm smoking a single pork butt I'll still use my Weber sometimes since it takes much less fuel than my offset. The snake method works really well if you're doing a long smoke

then why do ppl buy an offset smoker?
 
Pork butt cooked 10 hours in acrockpot with Claud's marinate makes some of the best pulled pork you will ever taste.

There is no possible way pork butt cooked in a crockpot would ever be comparable to one that is smoked.

i use same method, but about twice as much charcoal and can get about 6 hours at 225 degrees. Are you using as few as the video's 2x2 charcoal layout? how many hours and what temp are you getting?

I want to try burnt ends which requires 10+ hours. I suppose I could do a second snake once the first one burns out and hope that halftime change won't sacrifice much flavor.

That way you can add more coals or wood when you need to.

Is that from experience or Arbitrary? You let it cool and seperate the fat and it is superb.

got that, just seemed like it's highly undesirable to lift the lid and ruin the temp once you got it where you want it. Everytime I lift lid, I lose about 80 degrees

Yep I use 2x2 and get about 8 hours before I have to add to it, mine's the 26" kettle so that probably explains why mine goes a little longer. And +1 on the hinged grate

A water pan in the center will help you maintain temp

Yes, but it won't take long to catch it back up in the Weber. Keep the top vent open and bottom vents completely shut and you're set.

Forgot to mention that...I fill an aluminum lasagna pan halfway with water to catch drippings.
 
My smoker came with a pan, but even after covering it in foil that sucker is a bitch to get clean. So I switched to aluminum lasagna pans too. It is bigger anyway so it catches more of the drippings making it even easier to clean. I HATE cleaning the smoker after I'm done
 
My first Florida hurricane experience was pretty underwhelming. The storm didn't come as close to Miami as was originally expected. The area that I live in wasn't expected to be impacted that much anyhow, but the 50 mph winds and heavy rains that I was expecting turned out to be sporadic 30 mph gusts and light rain. Not that I'm complaining.

Glad I didn't go all out like some of the people around here. Some of them spent well over $1,000 prepping for this storm and it turns out that all it amounted to was an average everyday South Florida storm, minus the thunder and lightning.

I really feel bad for the people who paid these predator handymen $400-$600 to put up hurricane shutters. Paid all that money to have the shutters/panels installed and all we got were a few stiff breezes.

I inquired about having my shutters installed by a couple of those install services and once I heard the costs I was like "thanks but no thanks.....I'll figure it out myself." Once I got home yesterday I was able to figure it out pretty easily. They're very simple to install. I'm not sure why a physically able person would allow themselves to be ripped off by these opportunistic services but it happens. Those install crews were all over the neighborhood raking in easy money.
