When did you salt the ribs? Any other flavoring besides wood chips and rub?
i haven't done any of that mustard, beer or apple juice stuff.
I did a light mustard and dry rub before I threw them on the pit.

First of all, I cook ribs on indirect heat. Secondly, if I use sauce I only do it for the last 45 minutes or so.

It's heat man and doesn't put any odor in the meat other than what you season it with.

I thought it was a barbeque thread and I was just adding a recipe. Barbeque is not exclusive doe by wood or and smoke. I am messing with the thread now though.
