Into hour five of smoking a butt. I keep seeing conflicting versions, some say wrap and spritz starting at 3 hours but I did not see a bark when I opened it up.

Help!

Wrap it, and either hit it with a liquid wipe or spritz it. Then cook it for a few more hours and the bark will be there if you have the heat right.

Oh, wait, I thought he meant by "opening up" he meant the smoker. Not the wrap. You never wrap it to start.

I wrapped it, do I need to undo?
If you left it unwrapped through for this much cook time, you have to wrap it or it will come out dry.

Uh opening up the smoker to see what the meat looked like??
That's what I thought you meant. Since it's wrapped, just let it cook at this point. Get it up to temp and hope for the best.

I wrapped it, do I need to undo?
I'd unwrap it ti finish it, if it stalls on pork butt I just crank up the temp on the smoker to get past it

Wrapping the meat keeps it from drying out, but you'd have to screw it up good to make a butt dry.
