Yucatan Potato Salad

6 russet potatoes, peeled and cubed
2 fresh poblano chile peppers
3 hard cooked eggs, chopped
1/2 cup chopped celery
1/2 cup chopped white onion
3 medium sweet pickles, chopped
12 green olives, sliced
1/4 cup lime juice
1 cup vegetable oil
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon mustard powder

PREP

COOK

30 mins


Directions

1. Preheat the oven to 400 degrees F (200 degrees C). Place the potatoes into a saucepan, and fill with enough water to cover. Bring to a boil and cook until tender, about 10 minutes. Drain.

2. Place the peppers into the oven so that they sit directly on the rack. Roast, turning every 10 minutes or so, until evenly charred. Place in a paper bag to sweat, then remove the peel when they are cool enough to handle. Remove the stem and seeds, and chop.

3. In a large bowl, combine the still warm potatoes, peppers, eggs, celery, onion, sweet pickles and olives. In a smaller bowl, whisk together the lime juice, vegetable oil, salt, pepper and mustard powder. I like to use a high speed mixing wand to help it emulsify. Pour over the potato salad, and stir to coat. Adjust seasoning to taste and serve.

I can't find any fresh pablano peppers this time of year.

Would you recommend a dried pablano or something along the lines of a jalapeno or bell?

On the real tip...my exercise program is at an alltime effectiveness. At 43 I can honestly say I am in the best shape of my life. The downside...I am sore all the fucking time. I have heard fish oils and shit like that help, but I'll get off the line and listen to anyone who has advice.

The only advice I can give you is to stop exercising so damn much. You're going to kill yourself.

I used to take fish oil for my bad knees, but the frikkin aftertaste ruined it for me.

FB infraction, but it seems like you're running everyday. Maybe going every other day?

Yesterday I was sitting on a 5 gallon bucket and texting on a job site. I looked up and notice a full length mirror with myself in the reflection. Sitting on a bucket in all of my wonderful glory was not a pretty site. I was so depressed that I left to go eat lunch. I'm guessing that 1000 consecutive salads wouldn't hurt me about right now.

I should probably cut down on my running...I have used the elliptical and treadmill to take off some wear and tear. Also...FB infraction...I know the perpetual posts of my run distance might look braggy, but it is a way to keep myself accountable. If that makes sense.

I don't claim any of my dependents so I get more back at the end.

I claim 0 dependents on my W-4. They take out more through the year, but I never have to pay in, and I usually get a few thousand back. This year I'm afraid, though, that we jumped brackets so it could be interesting come filing time.

Back of the regimine some. Give your body a little time to recoup. You dont have to push hard evefy time. I think the strong push twice a week with other days being moderate and two days just relaxing keep the muscles and joints from being too inflamed and sore. On the hard days ice down the knees after exercise.

FB infraction continued...it looks like it has done its job. I know folks who post that shit for like a week and then it's gone. Props for staying committed.

I've had minor surgery on each of my knees, but I like to run as well. When my wife is working nights I have no choice but to run on the elliptical since I don't want to leave the kids at home alone. On those days my knees feel much better. When I run in the mornings, my knees hurt like hell when I stand up.
