DCC Appreciation Thread...

I have two oaks, a pecan, 3 Piss Elms (not sure what their real names is, that is what we call them), 1 Siberian Elm (dead now), and 6 Cypress trees. I didn't even count the Paradise trees. They are a fucking nuisance, but I can't get rid of them.
 
I love mushrooms. I bet that shit would be good to add in to soups and stews.

Mushroom Ketchup


Ingredients


  • 2 lb (900 g) mushrooms (button, cremini, or a mix)
  • 2 tbsp kosher salt
  • 1 cup (240 ml) cider vinegar
  • 1 tsp black peppercorns
  • 1 tsp allspice berries
  • 2–3 cloves
  • 1 bay leaf

Method


  1. Roughly chop the mushrooms and toss them with the salt.
  2. Place in a bowl, cover, and let sit 12–24 hours. The salt will draw out a substantial amount of liquid.
  3. Transfer everything (mushrooms and liquid) to a saucepan.
  4. Add the vinegar and spices.
  5. Bring to a gentle simmer and cook for 20–30 minutes.
  6. Strain through a fine sieve or cheesecloth, pressing to extract as much liquid as possible.
  7. Return the strained liquid to the pan and simmer until slightly reduced and concentrated.
  8. Cool and bottle.

Storage


  • Refrigerate and use within a few weeks.
  • For longer storage, sterilize bottles and ensure the ketchup is sufficiently acidic.

Yeah, it's been around for quite a while. It was funny the first time I watched and both times I just watched it again.
