Great game to see Aikman-Irvin connection and Aikman’s accuracy in Aikman’s second game ever.

Just searched in YouTube for full game broadcasts with the Cowboys.

Got random game, Cowboys v. Bengals in 1994.



Amazing how much Jeff Blake was the precursor to Russell Wilson.

I recommend everyone just watches a full broadcast game from whatever era you want.

Just for fun. Because it is a hell of a lot better than the product now.

Pre Sunday Ticket, I was unable to watch many of these games. In many cases, had to wait until ESPN NFL Countdown to know if Cowboys won/lost.

Gonna break out some old board recipes....

Classic Pea Salad

Ingredients
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon granulated sugar
  • 2 teaspoons apple cider vinegar
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon pepper
  • 4 cups frozen peas , thawed
  • 1/3 cup diced red onion
  • 3/4 cup cubed sharp cheddar cheese (approximately the same size as the peas)
  • 8 slices bacon , cooked crispy and crumbled
Instructions
  • Put sour cream, mayo, sugar, apple cider vinegar, salt, and pepper in a large bowl; whisk to combine.
  • Add peas, onion, cheese, and bacon to the bowl; gently stir to coat completely.
  • Refrigerate at least 1 hour before serving. Garnish with some crispy bacon.
Notes
Any leftovers should be stored in the refrigerator in an airtight container for up to 3 days. I do not recommend freezing this salad, however. The dressing will not hold up very well, and the peas and bacon will get too mushy once thawed.

Yucatan Potato Salad

This is not your regular potato salad. Try this when you want to be a little different.

Yucatan Potato Salad

Ingredients

  • 6 russet potatoes, peeled and cubed

  • 2 fresh poblano chile peppers

  • 3 hard cooked eggs, chopped

  • ½ cup chopped celery

  • ½ cup chopped white onion

  • 3 medium sweet pickles, chopped

  • 12 green olives, sliced

  • ¼ cup lime juice

  • 1 cup vegetable oil

  • 1 teaspoon salt

  • ½ teaspoon ground black pepper


  • 1 teaspoon mustard powder

  • Directions

  • Step 1
    Preheat the oven to 400 degrees F (200 degrees C). Place the potatoes into a saucepan, and fill with enough water to cover. Bring to a boil and cook until tender, about 10 minutes. Drain.
  • Step 2
    Place the peppers into the oven so that they sit directly on the rack. Roast, turning every 10 minutes or so, until evenly charred. Place in a paper bag to sweat, then remove the peel when they are cool enough to handle. Remove the stem and seeds, and chop.
  • Step 3
    In a large bowl, combine the still warm potatoes, peppers, eggs, celery, onion, sweet pickles and olives. In a smaller bowl, whisk together the lime juice, vegetable oil, salt, pepper and mustard powder. I like to use a high speed mixing wand to help it emulsify. Pour over the potato salad, and stir to coat. Adjust seasoning to taste and serve.
