Smoked a Costco prime packer brisket yesterday, saw a video on Youtube where they talked about NOT wrapping, so I tried that.

Never again... the inside was still very moist, but the bark was too hard.

At what temp were you smoking?
 
255 first, then when it got to 170 internal I turned it up to 270 until it reached 200 internal
Sometimes I don't wrap my briskets and they turn out fine...even smoking up to 18 hours.

But I keep my heat at 225 the whole time unless we're getting pressed for time.

So I guess if you're not gonna wrap it may be best not to bump the heat up.

Correct. 225 is the temp.

Yeah that high least wrap with pink butcher paper
 
So I took about the last 4 lbs of sliced brisket I had left over and stuck it in the sous vide for 6 hours at 140... you wouldn't have known that I fucked it up by not wrapping it.

BTW, it was a video that used Goldee's in TX as the example for not wrapping the brisket until resting it.

You bastard! Now I'm gonna spend the rest of the day researching suveed.
 
Any recommendations on pellet brands? I've tried Traeger, Myron Mixon, and Weber so far but I've also heard that Lumberjack is the best, with better smoke output compared to the others. Opinions?
 
I have no recommendations, have resisted the urge to go pellet.

I normally use Pit Boss. I've bought a couple of bags from Sam's Club (Premium Hardwood) but the flavor wasn't as good, IMO.

With Pit Boss I usually use competition blend, hickory, and mesquite.

Is that just trendy now? They seem like a hassle for the price.

Pellet grills a hassle? Thats the first time that Ive heard that. Pellet grills are the lazy smoking grills. I love it, though.

I was talking about the inconvenience of getting pellets versus a bag of charcoal or propane tank.

I don’t hang out at Home Depot.

Pellet bags last a long time. Much longer than charcoal bags.
 
Coleslaw done, bout to get started on the Brunswick stew.
