I'm fixing to drive to Lockhart today for my Grand daughters Graduation/ 18th Birthday/ Going to Navy boot camp party. (She's amazing BTW). Last time there I ate at Kreuze and the meats there are amazing. It is the best seasoned meat right out of a smoker I have ever tasted. It's odd though in the sense they really have little for sides. YOu get you meat on meat wrapping paper pay for it first, then go and get what few side they have and pay for them separately.
I've also eaten at Smitty's and the set up is the same, but they have a better variety of sides. Meat isn't as flavorful to me.
And I agree with the others here that Coopers should be on this list.

That being said, I'm getting me some Kreuze today boys! :towel:buddy

Shouldn't it say best BBQ you can find between Austin and San Antonio?
It boggles the mind that all the best BBQ joints in Tx would find themselves in such a confined space, more like the review of his road trip...

I drove out to Luling to specifically try #6 on that list back in 2011.

It was ranked #1 in Texas Monthly magazine at that time so I thought it was worth checking out.

It was good, but it wasn't #1 or even #6 in Texas good. Salt Lick is far far far better.

Any of yous guys have experience smoking a pork belly?

I picked one up on a whim, but have never fooled with it before.

Smoke it, slice it then fry it up for bacon. The only pork belly I have had any exposure was bacon. It's probably too fat to do much else. Just my take.
 
I've researched it some more and plan on brining it a couple days then smoking it like a butt.
 
Cooked a brine of salt, brown sugar, allspice, and whole cloves this morning. Plan to cut the belly in half and start brining at lunch.
 
So that pork belly was awesome and I'm trying another this weekend. Think it might be my new fave.

Yeah seemed to be all in the Austin/San Antonio area.

Agree on Cooper's and Franklin's. No Pecan Lodge in Dallas' Farmer's Market. Stanley's in Tyler.

Pecan usually, I will sometimes add in peach wood chunks


I've read that maple is good with Turkey, but right now I only have access to hickory and pecan.

Going to make do this go-around but I'm looking forward to trying some maple pretty soon.

We don't do turkey either. Black Forrest ham, brisket and pork loin will cover the meat items for us.
