I almost always go 160 for the breast, wrap in foil and towels and put it in the cooler while I prep other stuff. I think 164 is recommended but I'm risky so I do it 160I've read that it's safe to take the breast at 150 and let the legs/thighs hit 165 if you plan on letting it sit for a bit.
I plan on trying that next time as well.

Nah, for Thanksgiving I switch to ham.I'll take chicken over turkey 364 days a year, but Thanksgivings are for turkey whether you like it or not.

Yep.One will have a long wait for a Turkey to be served at our household. I will go with the other white meat.
