Are you cranking the heat up when you do them?A packer is the only brisket I can find in my local area, so we usually have a feast when I smoke one.
I've done burnt ends a time or two, but they don't get as crispy as I think I should be.
Do y'all keep them in foil/paper or just leave them directly on the grill?

I chop them into around 1" cubes, throw them in one of those foil pans, coat them with some sauce mixed with apple cider vinegar and crank the smoker to 275-300 for an hour or three.
