I finally perfected shoulder. I was buying trimmed pork shoulder instead of picnic with the fat collar.

That should not matter though.

Let's talk about the trimmed shoulder.

Did you wipe it with a binder like mustard or olive oil before applying the rub?

It's funny you mention the picnic with fat collar, because I just smoked one this past weekend.

I’ve got a really good pork rub recipe if you’d like it. It took me a while to get it to the flavor profile I wanted, and it’s really good. Works great on pork butt and even better on ribs. I’m also working on a mop sauce, but I haven’t gotten that one quite right yet.
