OMGawww, I just made and ate this.

It was so good. It almost burned my face off though.
 
Thai Lettuce Wraps
1.25 lbs ground turkey/chicken or bison
2 heads of bibbed lettuce
1/3 cup Lite Coconut Milk
3tbs Thai Curry Paste
1.5 cups of chopped peppers ( yellow, red & Orange )
1 cup of grated zucchini
2 Jalapeños
2 Tablespoons yellow curry powder
2 Teaspoons cayenne
2 Teaspoons smoked paprika
* Prepare the meat on stove top mixing in diced peppers, curry paste & spices.
* Salt & Pepper to taste

I don't know why I forgot the recipe earlier.
