Yeah, while the Super Bowl matchups would be more 1 seed vs 1 seed, it would too much dilute the meaning of the playoffs and Super Bowl.

Would NBA or hockey be better off with just single elimination? In baseball, the pitchers rotation is too important to dosingle elimination.
