Just shred your block of cheese all at once and store what you don't use in a ziploc bag. Or seal it in an airloc bag and freeze for whenever you need it. Not that hard.

I've never frozen cheese before. As a child my parents always froze a loaf of bread. Even that seems weird to me now.

Hard cheeses are ok to freeze. Soft cheeses like mozzarella is not. Too much moisture.

We’ve always frozen bread, too. Seems to be just fine if you let it thaw slowly.
