And the worst part is, just like with the Miles Austin contract, they could have been waited out until the end of the season to confirm whether the deals needed to be made or not.Lee and Romo.....two contracts that the Cowboys will definitely regret 2 years from now.

With Lee they definitely should have waited. The guy has been in and out of the lineup his entire career. Had the Cowboys waited until the end of the contract year on all 3 (assuming our front office would actually function like a real front office), they would've seen more than enough from all 3 to realize that they should pass on the extension, or in the case of Lee, commit less money.
But as is always the case with the Jones', they just can't ever be patient and wait things out with a player.
On the rare occasion that Jerry finds a decent player he has to keep resigning them. It's not like he can just go out and find a replacement. I'd take a good player who I can count on to play for 16 games over a great player who will only give me 11 games.

"Find a way to play"? That means this is significant.
That's a lot of back problems for a young player. Will he need (and will he accept) an injury clause in his extension?
