A packer is the only brisket I can find in my local area, so we usually have a feast when I smoke one.

I've done burnt ends a time or two, but they don't get as crispy as I think I should be.

Do y'all keep them in foil/paper or just leave them directly on the grill?

Are you cranking the heat up when you do them?

I chop them into around 1" cubes, throw them in one of those foil pans, coat them with some sauce mixed with apple cider vinegar and crank the smoker to 275-300 for an hour or three.

I do the same, but usually leave the heat around 225.

Will try it your way next time.

What is the difference with a packer?

When I'm in the city I can find points or flats but they cost just as much as I can get a whole packer for back home.

I'd never had a smoked reuben, so it was nice to experience what heaven is all about.
