Just saw on Twitter that Franklin BBQ burned down this morning.

That was one of Texas' most popular BBQ spots. Damn that sucks.

Sounds like they were able to save most of the place, and yes it's great. Some of the best brisket I've ever had.

Yeah it is. I've only been there once. We went in the middle of the morning during the week. I mostly go to Salt Lick when I'm in the Round Rock/Austin area because it's not as crowded as Franklin's.

That is the only way to cook a whole bird.
Nah, this is just a big ass turkey so I figured it would need to be split to cook evenly.

All birds need to be split this way. It's the best way to cook them. Especially chicken. You can get out of my face with the turkey thing. I will be smoking two hams for Thanksgiving.

But then you won't have leftover turkey so you can make turkey sammiches with gobs of mayo

OK, I got an electric smoker. Ridicule me all you want.....I don't have a lot of spare time and figured this would be a good way to start.

Send me your tips and tricks. Probably going to focus on turkey and chicken initially.

For your whole chickens, you can’t beat a spreadcock preparation. Trust me on this.
