I finally got tired of it after 12 1/2 hours.

Maybe it was the meat. I have struggled with it before but never like that.

What kind of cooker?

Did you use a salt and brown sugar brine or did you get all fancy? How'd they turn out? I've never brined ribs.

I did a Kosher salt and brown sugar brine. Nothing fancy. I just wanted something to tenderize the meat a little more and add another layer of flavor.

They turned out really well. I can’t complain at all.

I smoked them in hickory for the first 2 hours and then in almond and cherry wood for the next 3, and basted them in my sauce the last hour of the smoke to caramelize the sauce and give it a little crust.

This is the rub that I came up with.

1/2 Cup Brown Sugar
1/4 Cup Turbinado Sugar (White sugar is fine, too)
1/4 Cup Paprika (Sweet or Smoked)
2 Tbsp Kosher Salt
6 Tbsp Black Pepper
2 Tbsp Chili Powder
2 Tbsp Garlic Powder
2 Tbsp Onion Powder
2 Tbsp Mustard Powder
2 Tbsp Cumin
2 Tsp Ground Cinnamon
1 Tsp Ground Ginger
1/2 Tsp (per pound) Accent

We aren't all remote learning here. I have had to redo my busing plan 4 times now. And, I'm transporting positive covid patients daily to quarantine sites. This semester has sucked so far.
